Just two
Today we only have two kids. My parents took Asher to the beach for his birthday, and he's getting treated to a (gf/cf) lunch there. So I only had two kids to make lunch for, and Curtis and I. Thankfully Curtis is eating again ;D It has been a peaceful day. It makes a big difference not to have an Asher to keep track of! I miss him already, though :p
Yesterday I cooked a full cup of kasha. I realized that was really too much for one day's bentos. From now on I will only cook a half cup for bentos. But kasha, unlike brown rice, does keep well in the fridge and taste fine after it has been refrigerated. So I pulled out the kasha I'd made yesterday to use today. I used our gf/cf hotdogs on top of the kasha. Some days I'm thankful that hotdogs exist. We're using the Hebrew National brand right now, but when we get to Earthfare next month I'm going to buy some that are additive free, because I don't like preservatives going into my kiddos.
I dressed up the kasha slightly with some pinto beans I had in the fridge. There were too few of them to be of much use, but they were perfect in the kasha. I added some pepper and a wee bit of salt.
The rest of our snap peas were featured in this bento, along with the wonderful watermelon and Curtis' favorite, oranges. I know for a fact we have been eating a lot more fruits and veggies with our bentos than before, and I think my digestion likes it! I still want to add some more fermented treats in, however.
